1. Mix and moisten the couscous with a little water and one tablespoon of oil and put it in the top part of the couscous maker. In the bottom part, bring 4 litres of water to the boil.
2. Fit the couscous over the boiling water and steam for 20 minutes
3. Turn in onto the plate and mix, added 1/3litres of water. Put it back to steam for another 20 minutes. Turn it onto the plate and mix again with 1/3litres of water and the raisins and steam another 20 minutes.
4. In the meantime, gently brown the almonds in a pan with a little oil; remove and drain onto paper towels.
5. Put the couscous and raisins on the serving platter, mix with butter and sugar (add according to taste).
6. Shape mixture into a dome and decorate with sprinkled confectioner’s sugar and cinnamon, placing the chopped almonds in the middle.
7. Serve with cold milkand flavoured with orange blossom.
