Mechouia

    ingredients

  • 4 tomatoes
  • 4 green peppers
  • 3 gloves of garlic
  • Coriander and parsley
  • ½ teaspoon Moroccan Sweet paprika
  • One teaspoon Cumin
  • Salt
  • 1 tablespoon Ouazzania Olive oil

Preparation

1. Cut the tomatoes into small slices

2. Mix the tomatoes, garlic, coriander, and parsley in a pan and then add the sweet paprika, cumin, salt, and olive oil.

3. Cook for half an hour.

4. At the same time peel the green peppers and cut them into small cubes.

5. Once the tomato mixture is well cooked, add the pepper and cook for a further 15 minutes.

6. You can garnish this dish with black olives and preserved lemon slices.
