Moroccan Bread

    ingredients

  • 300 g flour
  • 200 g semolina
  • 1 tablespoon sugar
  • 10 g brewer’s yeast
  • Salt
  • Sesame seeds
  • 250 ml lukewarm water

Preparation

1. Dilute the brewer’s yeast in 100 ml of lukewarm water and add the salt. Cover and set aside for 15 minutes.

2. In a large container, mix the flour with the semolina, and make a well in the middle. Add the yeast mixture plus 150ml lukewarm water into the well and mix well. Knead the dough for 10 to 15 minutes.

3. Divide the dough into 3 equal parts and shape into 3 rounds flat loaves. Sprinkle with sesame seeds.

4. Place the loaves on a floured oven pan and cover with damp cloth. Let the loaves rise for 1 hour.

5. Heat the oven to 220°C/400°F, with a fork, make some small holes in the bread and bake for 30 minutes.
